DO-IT’s Quality department consists of academically trained food technologists who through experience and preference, have specialised in quality assurance and technological advice. They continuously strive to bring the answers to your questions by maintaining intensive relations with DO-IT’s suppliers and by updating their own knowledge. In 2008 they have enrolled in the new pan-European food safety qualification programme leading to their accreditation as EU recognised food safety specialists.

Organic and Fumigation
Two words which don't match, because in organic culture the use of pesticides is not allowed. Many of the products in our program attract insects, which is a problem, especially in the summer. In winter the temperature is so low here that insects don't develop.
We currently use two methods to fight insects. The first one is pressure treatment, which we have used for some years. The second is a controlled atmosphere method.
Both methods can be used preventively. We treat our products before the eggs become larvae otherwise there would be dead larvae in the product, which, of course, is unacceptable.
With this method pallets with products are put in a tank. First this tank is pumped vacuum and then it is filled with carbon dioxide to a pressure of 20 bars. This pressure level is maintained for a few hours. The combination of pressure and carbon dioxide kills all the insects and, more importantly, destroys any eggs. It takes about 3,5 hours for one complete cycle.
Controlled Atmosphere method
We use this method now for several years and will place a second treatment chamber. The pallets with products are put in an airtight room, the amount of oxygen is reduced and the chamber is heated to 28°C. At this temperature insects are most active and need a lot of oxygen; because this is not available they will die. Moreover, at this temperature insect eggs will normally develop rapidly, because they absorb oxygen from the air. However, as there is almost no oxygen, the eggs stop developing and die.
This method is somewhat slower than pressure treatment and takes about 7 to 12 days. On the other hand, with this method more product can be treated at a time and the facility is closer at hand.

Quality Assurance measures
Since DO-IT focuses on long-term relations with its suppliers, this is a basis for trust and knowledge exceeding analytical know-how. But of course the trust has to be earned in the first place.
Therefore all our suppliers are required to complete a short supplier self audit form which gives us valuable insight into the companies behind our products.
Our products are manufactured by producers who are organically certified and who work according to the principles of FSSC 22000 and ISO 22000 or have been given information by DO-IT or its agents about how to manage the critical process point. They are also audited on a regular basis. These audits are carried out by internationally accredited organisations and, increasingly, by our purchasing staff assisted and trained for this purpose by QA.
DO-IT itself is certified according to the recent Dutch FSSC 22000 and ISO 22000 program which have been recognised by the GFSI Technical Committee as equivalent to BRC Technical Standard, IFS and SQF 2000. Lloyds Register performs regular audits and an independent FSSC 22000 consultant performs our internal audits.
In 2007 DO-IT has welcomed the Dutch Association of Bakeries and has received a favourable audit report.
